BREAKFAST





ONION RAVA DOSA
This quantity will be sufficient for 4 adults. This a variety of dosa that can be taken for breakfast, dinner or as a snack. The look of this dosa would attract kids. Never mind that this dosa never comes in any perfect shape and it would resemble some state's/ country's map! 


INGREDIENTS:
  1. Semolina (rava) - 1 cup 
  2. Rice Flour - 1 cup
  3. Maida/ All-purpouse flour - 1/2 cup
  4. Big Onion - 1 (finely chopped)
  5. Green Chilly - 2 (finely chopped)
  6. Ginger- a small piece (finely chopped)
  7. Cumin seeds- 1&1/2 tspn 
  8. Curry Leaves- A Handful (finely chopped)
  9. Hing/ Asafoetida - 1/2 tspn
  10. Pepper powder - 1 tspn
  11. Water -  as required
  12. Salt- to taste
  13. Ghee- to taste
  14. Some Optional Ingredients - Coriander Leaf (finely chopped), Cashew Nuts (crushed)
 PREPARATION: 
  • Soak the semolina in water for about 15 mins. 
  • Without stirring in the bowl, pour out the water used for soaking. This can be done easily because the semolina would have been deposited below. 
  • Now add the Rice Flour and Maida and mix all with a spoon. 
  • Add water to the above mix and stir well. You can use a handy egg beater to ensure a lump free batter. The batter must be the consistency of butter milk.
  • Now we are ready to add the spices and get some flavors 
  • Add the Cumin Seeds, Green Chillies, Ginger, Pepper Powder, Hing, Curry Leaves and Salt. 
  • Its time to add the onions as well but you might want to separate the chopped Onions by crushing them  with your fist. 
  • At this stage you could also add the optional ingredients. 
  • Mix all the ingredients well, allow it to rest for around 30 minutes and the batter is now ready for use. 
  • Heat the Tawa/Pan on a medium flame. You could use a non-stick pan or the stone tawa you might be using to make dosa. 
  • Spreading this dosa is not like the basic dosa. You could either sprinkle the batter all over the pan using your hands or pour the batter little by little using a scoop type spoon or a small cup. The batter when spread on the pan would look like a net.
  • Roast the dosa on both sides until brown and crisp. The cooking time would be longer than the normal dosa. 
  • Take the dosa off the pan and spoon over some ghee. If you're health concithious then just swipe the spoon of ghee over the dosa. 
  • You're now ready to have hot Onion Rava Roast with coconut chutney/onion-tomato chutney!



SEMOLINA UPMA (RAVA UPPUMAVU) RECIPE
This quantity will be sufficient for 2 adults.




INGREDIENTS:
  1. Semolina (rava) - 1 cup
  2. Big Onion (savalla) - 1/2 - finely chopped
  3. Water - 1 & 1/2 cup
  4. Salt- to taste
  5. Oil- 1-2 tbspn
  6. Black Mustard seeds- 1 tspn
  7. Dry red chilly - 2
  8. Curry Leaf - A hand-full
 PREPARATION: 
  • Fry the semolina in a pan without any oil till it turns slight brown and keep aside. 
  • Heat oil in a pan, crack mustards, then add dry red chillies, curry leaves and the chopped onions. Fry onions till it turns brown
  • Then, add water and let it boil. 
  • When water is boiled, add required salt and gradually add the rava. Keep stiring as you add the rava so that it does not stick.
  • Stir well so that all the semolina absorbs the water and it separates from each other.
  • Serve hot with chutney/ banana/ sugar & pappads.
 Tips:
* If you want the upma to be in a sticky form, then add 2 cups water instead on One-quarter.




VEGETABLE UPMA
This quantity will be sufficient for 2 adults. 

INGREDIENTS:
  1. Semolina (rava) - 1 cup
  2. Big Onion - 1/2 - finely chopped
  3. Vegetables- Carrot, Beans, Peas - evenly cut into small pieces
  4. Black Mustard seeds- 1 tspn -
  5. Dry red chilly - 2- Broken into halves
  6. Coriander Leaf-  A hand-full
  7. Vegetable Oil- 1-2 tbspn
  8. Water - 1&1/2 cup
  9. Salt- to taste
 PREPARATION:
  • Fry the semolina in a pan without any oil till it turns slight brown and keep aside. 
  • Heat oil in a pan, add the mustard seeds and let it crackle; then add dry red chillies and the chopped onions. Fry onions till it turns brown
  • Now its time to add the cut vegetables. Sauté them on a medium flame till semi cooked and this might take only 5 minutes. 
  • Add water to the above and let it boil. 
  • Now add the required salt, lower the flame and add the rava slowly and stirring it continuously. Keep stiring as you add the rava so that it does not stick.
  • Stir well on low flame so that all the semolina absorbs the water and it separates from each other.
  • Take the dish off the flame and add the chopped coriander leaves and serve hot.


SPICY POHA
This quantity will be sufficient for 2 adults. 


INGREDIENTS:
  1. Flattened rice flakes (thick) - 1 & 1/2 cup
  2. Big Onion - 1/2 - thinly sliced
  3. Tomato- 1/2 - finely chopped
  4. Green Chilly- 1- finely chopped
  5. Black Mustard seeds- 1 tspn 
  6. Cumin seeds- 1/2 tspn
  7. Dry red chilly - 2- Broken into halves
  8. Raw whole peanuts- 2 tbspn
  9. Turmeric powder- 1/2 tspn
  10. Red chilly powder- 1 tspn
  11. Coriander Leaf-  A hand-full
  12. Salt- To taste
  13. Vegetable Oil- 2 tbspn
 PREPARATION: 
  • Wash the rice flakes well in cold water for around 4-5 times. Soak the rice flakes in cold water till the flakes becomes soft and drain them.
  • In a pan, heat a teaspoon of oil and roast the peanuts till they are brown. Set this aside.
  • In the same pan, heat rest of the oil, crackle mustard seeds & cumin seeds and then add the dry red chillies. 
  • Add the sliced onions and sauté till its soft. Then add the chopped green chillies. 
  • Add the turmeric powder, chilly powder and stir for a couple of seconds. 
  • Add the chopped tomatoes and sauté till it becomes mushy.  
  • Now add the drained rice flakes and mix well on low flame so that all the flavours combine well with the rice flakes.
  • Take the dish off the flame and add the chopped coriander leaves and the roasted peanuts.
