RICE Recipes

All of us have leftover rice in fridge, especially if you have rice on a regular basis. You can try various recipes to use up this rice using different vegetables or even egg, chicken, fish or any other meat with the flavours you like, whether it be Indian, Asian or Continental.

I would like to share with you some of the recipes I have tried inspired from my family and friends. 


Egg Fried Rice
This recipe is inspired from my Mother's sister. She used to make it for me and my cousins for lunch box to office. This is a simple rice recipe that you can make in a fraction of minutes, simple and tasty. 





Ingredients (for 2 persons): 
  1. Eggs - 2
  2. Cooked Rice - As required for 2 persons
  3. Big Onion - 1/2 finely chopped
  4. Ginger - an inch finely chopped
  5. Garlic - 2 cloves finely chopped
  6. Green Chilly - 1 finely chopped
  7. Cumin seeds - 1/2 tspn
  8. Coriander Leaves- a handful
  9. Salt - To Taste
  10. Black Pepper (ground) - 1 tspn
  11. Vegetable Oil/ Olive Oil- 1 tspn for cooking
Method of Cooking:
  • Heat oil in a kadai or pan. Put the cumin seeds and wait till the colour changes. 
  • Now add the ginger and garlic and sauté till the fragrance comes and the garlic is light brown. 
  • Then add the chopped green chilly and onions and sauté till the onions are cooked. At this stage you can add the salt to the onions for the faster cooking process. 
  • Break the eggs and pour into the pan; stir continuously till the eggs are well done. 
  • Add the black pepper and also some more salt if required. 
  • Turn the flame low, add the cooked rice and mix all the ingredients well. Leave it for 5 mins so that all the flavours gets into the rice. 
  • Take off from the flame and garnish with coriander leaves.
