BREAD VADA (from my sissy)
Ingredients:
- White Bread - 12 slices
- Big Onion - 1 - finely chopped
- Green Chilly - 3 - finely chopped
- Curd (less sour) - 1 tablespoon
- Coriander leaves, Curry leaves - 1 hand full, finely chopped
- Salt - to taste
- Oil - to fry
Preparation:
- Dice the bread and rub between hands to powder it.
- Add chopped onions, green chillies, coriander leaf and curry leaf.
- To this, add the curd and sprinkle salted water (mix required salt into half glass water)
- Knead the above mix to a dough like that for chappathi
- Make small balls of the dough and flatten them with your fist into the shape of vada; fix broken edges if any.
- Heat oil in a pan and fry the vadas (shallow fry or deep fry)
PAPPAD VADA
Ingredients:
- Channal Dal powder/ Besan (kadala peruppu podi) - 2 cups
- Rice powder (ari podi) - 1/2 cup
- Asafoetida (kaayam) - 1/2 teaspoon
- Red chilly powder - 2 teaspoons
- Cumin seeds (jeerakam) - 2 teaspoons
- Pappad - the urad dal pappads
- Salt - to taste
- Oil - to deep fry
- Mix all of the ingredients with little water to a batter not so loose
- Heat oil in a deep pan, Dip the pappads in the batter and fry them in the oil.
PARIPPU VADA
Ingredients:
- Channa dal (kadala peruppu) - 1 & 1/2 cup
- Red chilly powder - 2 teaspoons
- Green chilly - 1, finely chopped
- Big onion - 1/2, finely chopped
- Curry leaf - a hand full, finely chopped
- Salt - to taste
- Oil - to deep fry
- Soak channa dal in water for 30 or 45 mins and then grind it.
- To it, add chilly powder, green chillies, curry leaves, salt, and the chopped onions.
- Mix all of the above to a dough, not too tight and make small balls out of them.
- Flatten each of the balls with the fist of your hand and fix broken edges if any to make the vadas.
- Heat oil in a deep pan and fry the vada in it.
